“Chinchorreo” with the Family (recipes)

Craving for some delicious Puerto Rican fritters? We know we are. Bring Luquillo and Piñones to your house! Here are some of our Alan’s Market “Chinchorreo” recipes ideas that will help you on your culinary adventure:

Turnovers (Empanadillas)

Empanadillas (Turnovers)

The best thing about turnovers is that you can fill them up with whatever you want. What’s your favorite turnover filled with? Shrimp, octopus, conch, crab or mixed?

Get creative with your filling; season your protein to taste and add sauce.

Add the filling into the middle of the turnover shell and fold in half to form a half moon; moisten edges with a little water and pinch down with a fork to seal closed. Cook in a pan with hot oil on both sides until crisp and golden. Transfer to paper towels to drain.

Seafood Salad

Seafood salad (octopus, conch, shrimp, calamari)

In a bowl, add olive oil, lemon juice, chili, bell peppers (cut into little pieces), olives, cilantro, garlic powder, salt and pepper. Add the shellfish of your choice and mix with olive oil and vinegar dressing.

“Bacalaitos”

Bacalaitos (Fried Cod Fritters)

We can’t forget about the bacalaitos. Soak cod in cold water for three hours or overnight in refrigerator. Drain and rinse with cold water. In a pan, cover codfish with water and simmer for 10 min. Drain and when cool, shred the fish. In a bowl, make a batter by whisking together flour, baking powder, seasoning and water. When smooth, mix in garlic powder, cilantro and the shredded fish. With a spoon drop the batter into a pan with hot oil (medium heat), press down creating a shape like circle and cook until crisp and golden. Drain on paper towel.

If you want to get creative, use the bacalaito like a toast and add on top some feeling left from the turnovers.

“Alcapurrias”

Alcapurrias

Peel, clean and cut chunks of green plantains and yautia. In a food processor add the plantains and yautia, blend until it’s all grounded. Add salt, vinegar and seasoning with achiote. In the palm of your hand add some of the mass and with a spoon press down the middle, creating a canoe form. Add the filling of your choice and seal the top with more mass, covering the filling. In a skillet with hot oil, cook the alcapurrias on both sides until  crisp and golden.
