Seafood Paella Recipe

Before getting into the recipe, lets learn a little about the Paella. Paella is a Spanish rice dish originally from Valencia. It is one of the best-known dishes in Spanish cuisine. Paella takes its name from the wide, shallow traditional pan used to cook the dish on an open fire.

There are three types of paella: Paella Valenciana, Seafood Paella, and Mixed (Land and Sea). 

Let’s make a “Paella de Marisco” (seafood paella) with Alan’s Markets products! Seafood Paella consists of shellfish (calamari, clams, mussels and shrimp), round rice, olive oil, saffron and seasoning. Yum!

Seafood Paella Recipe

Mix Paella

Ingredients:
  • 1 tbs. Olive Oil
  • cups La Carreta Bomba Rice
  • 1½ cups Tomatoes and Garlic (chopped)
  • 1 Yellow Onion
  • 3 3/4 cups Chicken Stock
  • 1/2 tsp. Saffron threads
  • Carmencita Paellero seasoning
  • 1 pack of Pana Pesca Seafood Mix
  • Lemon, to taste
  • Handful of flat-leaf Parsley (chopped for garnish)
  • Pimiento Piquillo (chopped in long slices, for garnish)

(For more flavor add Chorizo Español and/or Lobster)

Steps:
  1. For this recipe you can have this easy paella on the table without using the traditional Valencian methods. No need for a paella pan. You can use a XL pan or skillet.
  2. In a saucepan over medium heat, bring the stock to a boil. Add the Saffron and salt. Turn off the heat and let the Saffron steep for at least 15 minutes. Taste and add more salt, if needed.
  3. Heat the olive oil in a large deep frying pan. Add the onion and soften for 5 mins. Add the chopped tomatoes with garlic. Stir in the Bomba Rice and the Paellero seasoning for 1min, covering all the rice. Add in the stock with Saffron and bring to a boil and let the liquid slightly reduce, then cover (with lid or tightly with foil) and cook on low heat for 20 minutes.
  4. Uncover and spread the Seafood Mix over the rice, pushing it into the rice slightly. Add a little water if needed. Cover and cook for another 10 minutes or until the Seafood Mix is warmed through and the rice is tender, turn heat off. Squeeze over the lemon juice and garnish with parsley and Pimiento Piquillo.

Serve the paella hot with your favorite Albariño!

Wine Pairing

Due to its delicate flavors, the seafood paella requires a light and fresh wine that will not dominate its aromas. We suggest choosing a white wine made from the Albariño grape.
